Melissa's Cinnamon Rolls

1/2 C. warm water
2 pkg yeast
2 T. sugar
1 sm. pkg. vanilla instant pudding
2 cups milk, room temperature
1/2 C. butter, melted
2 eggs, beaten
1 tsp. salt
8 C. flour
1 C. butter, melted
2 C. brown sugar
2-3 T. cinnamon
6 oz. cream cheese, softened
1/3 C. butter softened
2 tsp. vanilla
4 1/2 C. powdered sugar
  1. Combine water, yeast and sugar.
  2. In a large bowl, mix pudding and milk.
  3. Add 1/2 cup melted butter, eggs and salt. Add yeast and blend.
  4. Add flour and knead until smooth and soft.
  5. Let rise until double, punch down and roll out to 34''x21''.
  6. Brush 1 C. melted butter then sprinkle with sugar and cinnamon.
  7. Roll up from the short side. Cut into rolls.
  8. Let rise 20 minutes.
  9. Bake at 350 degrees for 20-30 minutes.
  10. Frost while warm. Beat cream cheese and butter together with electric mixer, add vanilla, then slowly add powdered sugar.
