Egg-in-a-Hole

Madelyn's Favorite Breakfast

Ingredients

  • 1 sliceOf Your Favorite Kind Of Bread
  • 1 TablespoonButter
  • 1 wholeEgg
  • Salt To Taste
  • Pepper To Taste

Preparation Instructions

With a biscuit cutter or the rim of a glass, press a hole in the center of the slice of bread.
Next, heat a skillet over medium-low heat and melt a Tablespoon of butter in it. When the butter is all spread out, place the piece of bread in the skillet and crack the egg straight into the center of hole.
Cook for at least 30 seconds or so before attempting to move the bread or things could get messy. Sprinkle the egg with salt and pepper to taste. After about a minute, flip it over with a spatula and salt and pepper the other side.

Now move the whole piece of toast around the skillet, soaking up all of the glorious butter. Let it cook until the yolk feels, to the touch, still soft without feeling over-jiggly. Here’s the key: golden brown toast, white (not brown/burned) whites, soft unbroken yolk.

Breakfast Skillet

1/2 loaf Jimmy Dean hot sausage
1/2 c. chopped onion (optional)
2 c. country-style hash browns (frozen)
6 eggs
1 c. cheddar cheese
salt, pepper and red pepper flakes, to taste

Additional toppings (optional):
diced tomato
diced avocado

Brown sausage and onion (optional) in large skillet. Add potatoes and fry until potatoes are cooked through. Beat eggs and add to skillet. Cover and cook about 5-10 minutes until eggs are set. Add cheese and seasonings to taste. Serve and top with additional toppings.

Another Deviled Eggs Recipe

Ingredients
  • 1 dozen eggs
  • 2 teaspoons dijon mustard
  • 1/3 cup mayonnaise
  • 1 Tbsp minced onion or shallot
  • 1/4 teaspoon tabasco
  • Salt and pepper
  • Paprika

Method

1 First hard boil the eggs. Fill up a large saucepan half-way with water and gently add the eggs. Cover the eggs with at least an inch of water. Add a teaspoon of vinegar to the water (this will help contain egg whites from leaking out if any of the shells crack while cooking). Add a pinch of salt to the water. Bring the water to a boil. Cover, and remove from heat. Let sit covered for 12-15 minutes. Drain hot water from pan and run cold water over the eggs. (At this point if you crack the egg shells while the eggs are cooling, it will make it easier to peel the shells.) Let sit in the cool water a few minutes, changing the water if necessary to keep it cool.
2 Peel the eggs. Using a sharp knife, slice each egg in half, lengthwise. Gently remove the yolk halves and place in a small mixing bowl. Arrange the egg white halves on a serving platter.

3 Using a fork, mash up the yolks and add mustard, mayonnaise, onion, tabasco, and a sprinkling of salt and pepper. Spoon egg yolk mixture into the egg white halves. Sprinkle with paprika.

If you want them to be a little prettier, put the egg filling into a freezer bag, make a cut off of one corner of the bag, and pipe them into the egg white halves.

Makes 2 dozen deviled eggs.

Deviled Eggs

Deviled Eggs

We eat a lot of eggs around here...

6 hard boiled eggs
1/4 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon pepper
3 tablespoons mayonnaise
paprika, to sprinkle on after

Peel eggs, cut eggs in half taking out the yolks. In a food processor combine yolks, salt, dry mustard, pepper and mayonnaise. Blend until smooth. Put egg mixture into a quart size ziplock and snip one corner, use to pipe yolk mixture into the egg whites. Sprinkle with paprika.
