Grape Salad

Ingredients:
2 lbs green grapes
2 lbs red grapes
1 - 8oz package cream cheese
1 - 8oz sour cream
1/2 cup sugar
1 tsp vanilla

Topping:
1 cup brown sugar
1 cup crushed pecans

Method:
1. Let the cream cheese soften & blend with the sour cream until smooth.
2. Add the vanilla and sugar.
3. Fold in the grapes.
4. Mix together the brown sugar and pecans.
5. Sprinkle over the grapes.

Prize winning popcorn

This popcorn recipe just now won the "John Payne tasty popcorn" award...

  1. Stack a paper plate on a folded over paper towel on another paper plate
  2. Fill paper plate with frozen pepperoni
  3. cover with paper towel
  4. microwave for 1 minute
  5. pepperoni should have rendered it's fat into the plate and paper towel. If pepperoni does not look a little dry and crispy, daub grease with paper towel and nuke for 20-30 more seconds
  6. pepperoni will be very hot. Set aside to cool a little
  7. pop your popcorn
  8. You may consider removing the kernels at this point, but it's not an insurmountable problem if you don't.
  9. crumble pepperoni into the popcorn
  10. Add pepper, if desired
  11. Enjoy!

Chocolate Covered Egg Attacks

Egg Attacks
Get ready for Easter.

1/4 cup firmly packed brown sugar
1/4 cup butter
3/4 cup powdered sugar
1/2 cup creamy peanut butter
1 teaspoon vanilla
12 oz semi sweet chocolate chips
2 tablespoons butter flavored shortening

In a microwave safe bowl, microwave brown sugar and butter in 30 second intervals, stirring between each, until brown sugar is melted. Stir in powdered sugar, peanut butter, and vanilla. Shape mixture into a ball and wrap in plastic wrap. Refrigerate for 1 hour.

Take out of fridge and shape mixture by teaspoonfuls into egg shapes. Place on a cookie sheet covered with wax paper and refrigerate for 30 minutes.In a microwave safe bowl microwave chocolate chips and butter flavored shortening in 30 second intervals, stirring between each, until chocolate is smooth. Let sit to cool slightly. Using the tines of 2 forks roll eggs in chocolate to coat. Place chocolate covered eggs on parchment or wax paper to dry. When dried remove eggs to an air tight container and there they can keep for a week.

Yummy Popcorn

Ingredients:
6 quarts of popcorn (about 3 bags of microwave popcorn)
1 cup butter
2 cups brown sugar
1/2 cup dark corn syrup
1 tsp salt
1/2 tsp baking soda
1 tsp vanilla

Instructions:Preheat oven to 250. Spray bottom and sides of a large roasting pan with Pam. Place cooked popcorn in pan, try to remove all un-popped kernels. In heavy pan, melt butter and stir in brown sugar, corn syrup and salt. Bring to boil. Stir constantly then boil with out stirring for 5 minutes. Remove from heat, stir in baking soda and vanilla. When soda is added it will cause a head of foam in syrup, just continue to gently stir and it will subside. Gradually pour over popcorn, mixing well. Bake for one hour, stirring every 15 minutes. Remove from oven. As it cools, continue to gently stir so it doesn't form large clumps, but stir gently so you don't break up the individual popped kernels. If it does form clumps, break apart once it cools.
