Apple Cinnamon Baked Oatmeal Ingredients


For the oatmeal:
  • 1 1/2 cups uncooked Oatmeal
  • 1 3/4 cups unsweetened Almond Milk
  • 1 large Apple (any type), peeled finely chopped
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon vanilla
  • Pinch of salt
  • 1 egg white
  • 1/4 cup pomegranate seeds
For the leche sauce (4 servings):
  • 8 tablespoons Greek yogurt low fat 2%
  • 4 tablespoons almond milk
  • 1 teaspoon cinnamon
  • 2 teaspoons honey
Directions
Preheat oven to 350F then spray a medium size baking dish with nonstick cooking spray.
Place all ingredients for baked oatmeal, except the pomegranate, in a large bowl and mix. Transfer into baking dish. Bake at 350 for about 30 minutes or until the top begins to brown. It is now ready to serve.
Mix all ingredients for leche sauce and spoon over the baked cinnamon.

Pumpkin Pie Oatmeal

Ingredients
  • 1/2 cup rolled oats
  • 1/2 cup water
  • 1/2 cup skim milk
  • 1/2 thinly sliced banana
  • 1/4 cup pumpkin
  • 2 tbsp sugar-free Torani Vanilla syrup
  • Spices: cinnamon, nutmeg, ginger, allspice
  • 1 tsp. walnuts
  • 1/4 graham cracker, crushed
Directions
Stir all of the above ingredients (except for graham cracker) into a microwave-safe bowl, the night before.
  Put the bowl in the fridge.


In the morning:
Remove from fridge. Microwave for 2 minutes (stirring occasionally).
Remove from microwave, stir some more and top with a delicious graham cracker crust.

Oatmeal Flax Pancakes

Ingredients

* 1 1/2 cups rolled oats
* 2 Cups milk or soy milk
* 1 Cup Whole wheat flour
* 2 Tbsp. ground flax seed
* 1 Tbsp. Agave syrup
* 1 Tbsp. Baking Powder
* 1 Tsp. salt
* 1/2 Tsp. cinnamon
* 1 1/2 Tsp. Vanilla extract
* 2 Tbsp. Plain Yogurt
* 1/3 Cup Chocolate chips ( optional )

Method

1. In a large bowl, blend together oats and milk and let stand 5 minutes.
2. In a medium bowl, stir together whole wheat flour, baking powder, flax, salt and cinnamon.
3. To the oat mixture, add the yogurt, agave syrup, chocolate chips and the large bowl of dry ingredients.
4. To make pancakes, use approximately ¼ cup batter per pancake. Cook over medium-high heat on a griddle or lightly-oiled frying pan.
5. Serve with maple syrup.
