1 sm onion, chopped
1/4 cup Zesty Italian dressing
1 pkg (8 oz) fresh mushrooms, sliced
1 can (14 1/2 oz) chicken broth
1 cup frozen peas
2 cups minute white rice, uncooked
4 oz cream cheese, cubed
1 tsp grated lemon peel
1/4 cup grated parmesan cheese
Cook and stir onion in dressing in large saucepan over med-hi heat 2 min or until tender.
Add mushrooms, cook 2-3 min or until tender.
Add broth and peas, stir. Bring to a boil.
Stir in rice and cream cheese, cover. Remove from heat. Let stand 8 min. Stir in lemon peel and parmesan cheese. Garnish with lemon slices and fresh dill, if desired.
Makes 8 servings, 2/3 cup each
